  1. Make ready 1 kg - mango pieces
  2. Take 1/2 tbsp - Kalonji
  3. Make ready 1/2 tbsp - Saunf coarsely crushed

  5. Prepare 1/2 cup - salt
  6. Make ready 2/3 chilli powder red
  7. Prepare 2 tbsp - turmeric
  8. Get 2 and a half cups - mustard oil approx
Instructions to make Punjabi Mango Pickle:
  1. Take mango pieces in large wide bowl or jar.
  2. Pour all ingredients over them, except oil.
  3. Mix very well with wooden spatula.
  4. Keep in sun for 4 days.
  5. Stir once, check for taste.
  6. Heat oil very well till smoky.
  7. Cool to almost room temperature
  8. Add to pickle and mix well.
  9. Pour into clean, dry pickle jars.
  10. There should be enough oil to form a layer over surface of pickle.
  11. Tie with a thin muslin, before placing lid.
