  1. Prepare 1 cup Arborio rice
  2. Take 2 tbsp Butter

  4. Make ready 3 1/2 cup of hot chicken stock

  6. Take 2 clove Garlic minced
  7. Make ready 2 tbsp Chopped fresh parsley

  1. Heat olive oil and butter in a medium sauce pot. Add rice and sauté for 3 minutes stirring constantly
  2. Add garlic, onion, salt and pepper. Cook for 2 minutes.
  3. Add 1 cup of hot stock and cook stirring constantly until absorbed
  4. Add another cup of stock and stir frequently until absorbed.
  5. Add 1 cup of stock stirring until absorbed
  6. Add remaining 1/2 cup of stock and stir until mixture thickens. Then add Parmesan cheese and parsley mix well.
  7. Plate and serve with a drizzle of evoo
