  1. Firstly, in a large pan add 2 tbsp of oil and add ginger slices. (thick pieces of ginger). Then add carrot and saute it. After saute it keep aside.
  2. Heat the same pan add remaining oil wait for 1 minute then add mustard seeds, red chilli, hing and curry leaves. saute till the mustard seeds splutter.
  3. Now add 2 tsp of chilli powder, turmeric powder, mustard powder, fenugreek powder and salt.Give a good mix and switch off the flame.
  4. Now add fried carrot and ginger, vinegar, lemon juice. - Then give a good mix. Your carrot pickle is ready. once the pickle is cooled completely transfer to a glass jar. Serve pickle immediately or store in a airtight container.
