The ingredients needed to make Carrot and jaggery kheer:
- Get 1/2 cup Grated carrot
- Make ready 3 cup Milk
- Prepare 4 tbsp Grated jaggery
- Take 1/4 tsp Cardamom powder
- Make ready 1 tbsp Raisins
- Take 1 tbsp Almonds
- Take 1 tbsp Clarified butter
When the carrots are warm or. Carrot Kheer or payasam is so easy to prepare and tastes so delicious hot or chilled. The only work is grating the carrots. Carrot kheer, also known as carrot payasam, is a sweet milky pudding perfect for any special occasion.
Instructions to make Carrot and jaggery kheer:
- Wash and grate the carrot.
- Heat one tbsp clarified butter in a pan
- Add grated carrot and saute for 3 - 4 mins and keep aside.
- Boil milk in a heavy bottom vessel.
- Once boiled keep it in a low flame.
- Add grated and fried carrot.
- Stir occasionally,cook till thickening of the milk
- Add cardamom powder and mix well.
- Add cashew nuts,raisins and almonds and mix well and turn off the flame.
- Once cooled add the crushed jaggery and mix well
- Garnish with almonds and serve.
It's really easy to make too! You can replace the sugar with coconut sugar or jaggery if you don't mind it changing the color of the dish. You can also use honey or maple syrup. I have used almonds in this recipe, you can also skip them. Add the blended carrot puree to the sabudana.
