The ingredients needed to make Chakka Varatti or Jackfruit Preserve:
- Make ready 1 Jackfruit medium(riped)
- Prepare 6-7 cup Jaggery
- Get 1/2 cup Ghee
I have seen my grandma to start early in the morning and finish by the late night. Start from peeling the skin of jackfruit cleaning and cutting into finely chopped pieces. Chakka Varatti (Jackfruit Preserve): A traditional way of preparing Jackfruit preserve in Kerala that stays good for an year. It is used to prepare ada, pradhaman, unniappam, etc.
Instructions to make Chakka Varatti or Jackfruit Preserve:
- Remove the jackfruit pods and deseed them. Grind the jackfruit pods to a smooth paste. Pressure cook in a vessel for 3 whistles.
- Heat a heavy bottomed Kadai or Uruli, add the jaggery.
- Dissolve the jaggery in about 1 cup of water.
- Let it boil on medium heat till one string consistency.
- Then add the pureed jackfruit and cook on medium heat, stirring once in a while to avoid burning.
- Do not cook on high flame.
- Once all the moisture is absorbed and the mixture starts thickening add the ghee little at a time or whenever you feel the mixture sticking to the botto
- Keep stirring and cooking till the mixture leaves the sides of the kadai.
- Remove from flame and let it cool naturally. Transfer into clean containers and keep dry.
- Delicious chakka varatti is ready. Eat it as it is or makes ela ada, Pradhaman or have it with Adai or even as bread spread.
Jack fruit preserve is made from ripe jack fruits. Generally this preserve is prepared when jack fruits are in season and used when they are not in season. Chakka / Jackfruit is a native fruit of Kerala and it will be there is almost every house backyard. Its mainly used from the month of February onwards. In Kerala, we use both ripe and tender jackfruit.
