- Coat the molds with butter, dust with flour and shake off the excess. Fill the molds with the batter (about 3/4 since the cake will rise in the oven).
- Preheat the oven to 390°F/200°C. Place the madeline mold into the oven. Reduce the temperature to 350°F/180°C and bake for about 17 minutes (depending on your oven and the mold, baking time may be between 15-20 minutes).

- The madeleine moulds (shell, heart, bear, scallop, rose and tart) can easily be bought online. If you want to make cake-like madeleines, use a tart mould. If you want tiny ones with an elevated centre, choose a deep mould.
