Thanks Carol–I had not realized until I researched the Hub how zest can be used in place of extract and juice. The Orange honey butter I made using the zest is absolutely terrific and wouldn't work well with juice. In cake batters, you may need to replace all of one or more of the liquids with orange juice to get an adequate orange flavor.

Instructions to make Vanilla with orange juice and lemon zest:
  1. Preheat your oven at 150° celcius depending on the make of your oven.
  2. I don't have a mixer so I used a blender.
  3. Put oil,sugar and blend on high speed
  4. Next put eggs one at a time and blend
  5. Put the vanilla, orange juice and lemon zest and blend at high speed for 3minutes
  6. In a clean bowl sift the flour and baking powder then put in the wet ingredients and fold in together.
  7. Once mixed well pour abit in a separate bowl and add in your cocoa.
  8. I wanted to do some queencakes so in a baking tin put your cup cakes and pour in. I put half of the mixed cocoa mixture and the other half without.
  9. Put in your oven and bake for 20 minutes at 100°
  10. Insert a skewer or toothpick and if it comes out clean then they are ready.
  11. The remaining mixture I greased my baking tin and poured the remaining mixture at intervals
  12. Bake at 150°
  13. The outcome

Choose your orange juice or fresh orange. When substituting orange juice for lemon juice, use Seville oranges if possible.
