Strain the broth through a sieve, discarding the solids, then leave it to cool. To make the soup, peel and/or trim the onion, leek, celery and carrots, then roughly chop along with the courgettes.   1. Season chicken thighs and roast at 190 until cooked. Meanwhile peel and dice all veg.
  2. In a large saucepan add a splash of oil, medium heat add diced veg, garlic, and mixed herbs. Cook for 10 minutes or so until they start to soften and get a bit of colour. Then add tomato purée and seasoning. cook for a few more minutes.
  3. Once chicken is cooked separate the meat into a bowl and put aside, stock can be made from the bones if you want but stock cubes work just as well. (I do have a chicken stock recipe if needed)
  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖

The beauty of this soup is the fact that it is easy to include whatever you want to this mix of ingredients, depending on what you already have. I made this using veg stock and left out the chicken and celery, but the mix of herbs was really nice and everybody loved the soup. Set out seasonings.. it to the soup mixture. Add rice or noodles for a thicker soup. Pour over Veg-All mixed vegetables, rice and chicken.
