- Clean the minced mutton. Keep it aside.
- Cut onions and green chillies. Make Ginger-garlic paste.
- Heat 2-3 tbsps oil in a cooker.
- Add bay leaves, star anise, black cumin, cinnamon, cardamom, clove, mace. Cook for a minute.
- Add onions. Cook until they become translucent.
- Add mint.
- Add ginger-garlic paste. Cook until onions are brown and the paste starts sticking to the bottom.
- Add green chillies. Add minced mutton. Cook for 5 minutes until it gets well mixed.
- Add salt and turmeric. Cook for 5 minutes.
- Add chilli powder and coriander powder. Cook for 5 minutes.
- Cook with pressure on low flame for 15 minutes.
- Taste and adjust. Add coriander and a pinch of garam masala.
- Garnish with onions and lemon. Serve with flatbread.
Mutton keema is nothing but lamb mince. The boneless meat of the sheep is finely chopped to make a mince. If you source it locally without the packaged ones, be sure to ask your butcher to remove excess fat.
